Vegetable beef soup is one of my favorite soups. I don’t think there can be anything better than a hot bowl of beef soup waiting for you when you come home from a cold day. And with a hot pepper on the side. It is pretty similar to Meatball broth, but it has chunks of meat instead of meatballs. Both these soups are very popular around East Europe.
Vegetable beef soup
I find this soup pretty easy to do. All you need are a couple of hours, some veggies, meat and cereal broth, which is pretty sour. This is a pretty sour soup. That's the way we eat most of our soups (actually broths).
Ingredients
- beef shank - 750 grams
- onion - 1 piece
- garlic - 1 clove
- tomatoes - 200 grams, chopped and peeled
- eggs - 1 piece
- peas - 100 grams
- green beans - 100 grams
- cereal broth - 1 liter
- carrots - 1 piece
- parsnip - 1 piece
- potatoes - 2 pieces
- red bell peppers - 1 piece
- celery root - 1 piece
- parsley root - 1 piece
- lovage - a few leaves, fresh and minced
- parsley - a few leaves, fresh and minced
- salt - to taste
Instructions
- First put to boil the beef shank along with the whole onion and the clove of garlic. Remember to remove the foam from time to time.
- While the beef boils chop the veggies. Chop the capsicum, carrot, potatoes, celery root, parsnip, parsley root bite size. I had the fresh parsley and lovage finely sliced and the tomatoes chopped.
- After the meat has boiled very well (mine took about 90 minutes) take it out of the pot along with the garlic and onion. Let the meat cool.
- In the remaining soup add all the veggies, minus the tomatoes, will add those later. Let them boil.
- After the meat has cooled remove it from the bone and cut it bite size.
- Add the pieces of meat back in the soup.
- When the veggies are almost boiled add the chopped tomatoes and cereal broth. Let it boil for another 10 minutes and salt it.
- Mix one egg and add it in the soup while mixing.
- Turn the stove top off and add the minced parsley and lovage.
- Serve it warm with a hot pepper.
