After i wrote the recipes for many types of soup and borscht, with meat, cream or eggs, i decided to make & write a vegetarian borscht recipe perfect for people who don’t eat animal products. It is a very nutritious and tasty dish. It’s sour vegetable borscht because i used wheat bran to make it sour. It is a very popular recipe in my country. If you don’t have wheat bran you can make your borscht sour by adding lemon juice or vinegar. Wheat bran is a very common ingredient (added to make the soups sour) to borscht in countries like Russia, Romania, Poland, Ukraine, etc.

You can make more vegetable borscht and before adding bran or lemon juice, take a few ladles out (just broth without veggies) and put them in bottles (depending on the quantity you want to save). Put those bottles in the freezer and save them to use in the future in rice dishes, soups or other recipes that call for broth.
Trust me it is as tasty as chicken or beef broth.
So with this recipe you gain two things: a nice tasty, healthy soup to serve to your family and you can make extra vegetable broth for future use. All in just 90 minutes or so.

- onion - 1 piece
- parsnip - 1 piece
- parsley root - 1 piece
- red capsicum - 1 piece
- carrots - 3 pieces
- celery - 1/2 piece
- green beans - 200 grams
- tomato paste - 200 ml
- potatoes - 3 pieces
- parsley - 1 bunch
- cereal broth - 1 litre
- lovage - 2 teaspoons, dried
- salt - 1 teaspoon
Instructions
First of all you have to chop the veggies:
- Finely chop the onion and chop in cubes the rest of the veggies (celery root, potatoes, carrots, parsnip, parsley rood, pepper). Actually chop them as you like'em in the soup.
- I used frozen green beans.
- Put all the roots (parsnip, parsley root, celery, carrots) in one bowl, and the other veggies (onion, pepper, potatoes) in another bowl because they have different cooking times.
- I half filled a 5 liter pot with water and put to boil the roots. I've let them for 20 minutes to soften.
- In this time i chopped the green parsley.
- After the 20 minutes i added the other veggies and let them until all were completely boiled.
- At the end i added bran, tomato juice and salt. I let it boil for another 10 minutes.
- Turn the heat off and add chopped parsley and dried lovage (use fresh if you have).
- Serve it warm with a hot pepper.
